Gluten-Free Banana Cake


  • 1 egg
  • 2 bananas  
  • 2tsp honey   
  • 2tsp Olive oil  
  • 1tsp Vanilla extract  
  • 1 1/4 cups gluten free SR Flour  
  • 1 1/2 cups Monster Health Food Co's Free & Lo  Muesli plus extra 1/4 cup Free & Lo for garnish


  1. Preheat oven to 175 degrees Celcius.
  2. Mash bananas and mix in honey, vanilla and oil
  3. Add the egg, lightly beaten.
  4. Stir through dry ingredients
  5. Pour into non-stick loaf tin
  6. Sprinkle with extra muesli and bake  for 25 minutes or until the skewer comes away clean.
  7. Allow to cool before serving.
