Gluten-Free Banana Cake
- 1 egg
- 2 bananas
- 2tsp honey
- 2tsp Olive oil
- 1tsp Vanilla extract
- 1 1/4 cups gluten free SR Flour
- 1 1/2 cups Monster Health Food Co's Free & Lo Muesli plus extra 1/4 cup Free & Lo for garnish
- Preheat oven to 175 degrees Celcius.
- Mash bananas and mix in honey, vanilla and oil
- Add the egg, lightly beaten.
- Stir through dry ingredients
- Pour into non-stick loaf tin
- Sprinkle with extra muesli and bake for 25 minutes or until the skewer comes away clean.
- Allow to cool before serving.
