Wholemeal Walnut Carrot Cake

Ingredients:

  • 1 cup wholemeal plain flour 
  • 1 cup raw sugar   
  • 1tsp bicarb soda   
  • 1tsp cinnamon   
  • 2 eggs   
  • 2/3 cup sultanas   
  • 2/3 cup walnuts   
  • 2/3 cup Monster Health Food Co Sports Muesli   
  • 1.5 cups grated raw carrot   
  • 1/2 cup sunflower oil  

Method:

  1. Preheat oven to 160 degrees Celsius.
  2. Mix all ingredients together
  3. Pour into a greased square tin
  4. Bake for 40-50 minutes, or until golden brown
  5. Allow to cool before serving
